Growing up in the south, brunch has become a way of life. I’ve never been huge on everyday breakfast, but slow weekends are different. I fell in love with creating recipes that are family can feast on and that feel special while also being easy to make, like Slow Cooker Shrimp and Grits.
Casseroles have always had a special place in my heart, because they’re simple! And let’s be honest: there’s something about a good holiday breakfast casserole that makes celebrating more fun.
This Biscuits and Gravy Casserole was originally created for a Sunday morning breakfast when we had a special houseguest. One of my husband’s best friends was visiting, and I wanted to make them a meal that would fill them up without leaving me cooking all morning in the kitchen.
Plus, I always love an excuse to use my White Southern Gravy recipe!
This sausage and egg casserole recipe is so simple that the kids can even help make it. All you need are eggs, breakfast sausage, cheese, store bought biscuit dough and white gravy.
It’s also a really easy recipe to double for the holidays or for large gatherings like a family brunch. I have a feeling this is going to become our family’s go-to Christmas morning breakfast casserole!
You can easily put the casserole together the night before, too. All you have to do is pop it in the oven the next morning and bake it.
If you’ve never had biscuits and gravy, be prepared to meet your new favorite breakfast comfort food. Traditionally with this classic Southern breakfast, the fluffy biscuits are topped with ladles of creamy sausage gravy and sausage or bacon on the side.
This easy breakfast casserole is that delicious breakfast, all rolled into one dish. Even my family’s pickiest eaters (aka my preschoolers) LOVE this perfect breakfast casserole recipe.

Ingredients Needed for Biscuits and Gravy Casserole
You’ll love how simple the ingredients for this egg casserole are! (You can find a printable recipe card with all of the amounts at the bottom of the post)
- Package of biscuit dough (I like using Pillsbury Grands, which are slightly bigger)
- Eggs
- 1 package of peppered gravy mix or white breakfast gravy mix (makes 2 cups), or you can make your own homemade gravy, like my Easy Southern Country Gravy recipe here.
- Pork breakfast sausage, any flavor
- Shredded Colby jack cheese
- Milk
- Salt and black pepper
You’ll also need the following supplies:
- 9×13 casserole dish
- Nonstick cooking spray
- Large skillet and spatula
- Small bowl and whisk (if you don’t have a whisk, you can use a fork)
While I prefer to use Colby Jack cheese, any kind of shredded cheese tastes great in this casserole, like mild cheddar cheese, sharp cheddar cheese or Monterey Jack cheese.
You can use any kind of milk with this recipe, including whole milk, 2% milk, skim milk or a plant-based milk. We don’t drink cow’s milk, so I actually make this using almond milk.
When it comes to ground breakfast sausage, the choice is yours. I find that pork sausage has the best flavor, but you can absolutely use turkey sausage instead for this delicious meal.
The white southern gravy is the key to this recipe. If you’re looking for the packages of the dry gravy mix in store, be sure you get one that says peppered gravy or white sausage gravy!
This biscuit casserole is a family favorite that’s easy to customize. Try adding bacon, or using a different kind of sausage or cheese.
How to Make Biscuits and Gravy Casserole with Sausage and Egg
Preheat your oven to 350 F and spray the bottom of the casserole dish with nonstick spray.
Brown the sausage in a skillet and drain fully. Set aside.
Open up the can of biscuits and cut each individual slice of biscuit dough into 4 pieces. Line the bottom of the baking dish with evenly spaced pieces.
Layer the cooked sausage over the biscuit pieces and then the shredded cheese over the sausage.
In a small bowl, whisk together the eggs, milk, salt and pepper. Pour the egg mixture over the cheese covered biscuits and sausage.
Make the gravy according to the instructions, and pour it over everything while still hot.
Bake for 40 minutes, or until eggs and biscuits are cooked through and look golden brown. Serve warm.
Leftovers are amazing too! You can store your leftover biscuits and gravy casserole in an airtight container in the refrigerator for up to 3 days. Be sure to allow the casserole to cool completely before putting it into the fridge.
Recipe Tips for the Best Biscuits and Gravy Casserole with Eggs and Sausage
Keep an eye on your casserole as it cooks. If you notice it getting too brown before it’s done cooking, tent it with aluminum foil.
If you are assembling the casserole in advance, just follow all the steps above up to the point it goes into the oven and cover it with plastic wrap or aluminum foil and place it in the refrigerator.
Keep in mind that the pre-made gravy is only good for up to 24 hours without being baked. After that it will start to get weird and won’t cook correctly (I learned this the hard way. Don’t make my mistake!)
Also, if you are making this the night before, I recommend letting it sit on your counter the next morning until it comes to room temperature before placing it in the oven.
If you put it in the oven directly from your refrigerator, you’ll want to allow for extra cooking time before the eggs and biscuits will be cooked thoroughly (15-20 minutes).
If your family likes gravy, I recommend making extra to serve with it! Homemade sausage gravy takes a little extra time, but is so good. Extra gravy is also great to have when you eat this hearty breakfast casserole the second time around.
This easy Sausage and Gravy Egg Casserole freezes easily too, making it a great dish to make in advance and bring to new moms or friends in need of a meal. Bake the casserole in a freezer-safe container or dish and allow it to cool completely before wrapping it well and placing it in the freezer.
Defrost the casserole in the refrigerator the night before, and heat it up the next day by placing it in the oven at 350 F for 25 minutes until it’s warmed thoroughly.
